
Toss the carrots with some leftover brown Basmati rice and fresh cilantro. Dress with red wine vinegar, extra-virgin olive oil, a little salt, some freshly ground black pepper. Voila: dinner.

Jeena, I am determined to eat more vegetables. The carrots were truly delicious--a bit of a suprise, frankly, considering how long they'd been in the fridge.
CC, you're right. This is how I eat most of the time. Especially the meals where we're not sitting down as a family. The rest of my family (wife and daughter) would never stand for this. This need something new and different every night. I will probably survive on chicken casserole and quinoa pilaf for the next week.
